     3 3/4 cups whole wheat flour
     3/4 cup cereal or seeds (I used Bob Mills 5 grain cereal)
     3 tsp salt
     2 1/4 tsp instant yeast
     1 cup milk
     2/3 cup water
     2 tbsp honey
     2 tbsp butter
     2 tbsp vital wheat gluten
     1 egg beaten with a little water for egg wash
     cereal for sprinkling on top of loaf

In the mixing bowl of a stand mixer add wheat flour, cereal, salt, yeast and wheat gluten.

In a separate bowl add milk, water butter and honey. Heat in microwave to get slightly warm. Remove and whisk until butter is melted.

Now pour the liquid into the mixing bowl w/ the dry ingredients.

Attach dough hook and turn your mixer on the lowest speed.

Let it knead until the ingredients are incorporated and your dough comes together. You may need to scrape the sides once in this process. Let it continue to knead for a few minutes. If you think itís too dry, add a little more water.

Place the dough in a greased bowl, cover & let rise until double. This can take 1-2 hours.

Choose your loaf pan, line it with parchment paper and lightly spray with cooking spray. Parchment paper is optional. If you donít use it just grease your pan.

Once your dough has risen punch it down and place on a lightly floured surface.

Form into a loaf and place in prepared loaf pan. Place in a warm spot and cover with a kitchen towel. Let rise for approx an hour.

When your loaf has risen, preheat oven to 375 degrees. Brush top with egg wash and sprinkle with some additional cereal.

Place in 375 degree oven for approx 40 minutes.

Remove from oven and let cool slightly.

Remove from pan, cool completely.

Slice and serve with your favorite topping. I chose butter and homemade plum jam!

notes: next time I will try 3 tbsps honey & 3 tbsps vital wheat gluten.
