Spanish rice [span-ish rahys]
1. rice prepared with chopped onions, tomatoes, green peppers, and sometimes diced ham, seasoned with cayenne pepper and mixed with butter.

     1 cup white rice
     1 3/4 cups water
     1 cup salsa
     1 small red onion, diced
     1/2 red pepper, diced
     1/2 cup black olives, roughly chopped
     2 tsp chicken or vegetable bouillon (powder, cube, or base)
     1 tsp ground cumin
     1/2 tsp black pepper
     2 tbsp butter

Melt butter in large skillet over medium-high heat. Add onions and peppers to the pan, and sauté until starting to soften, about 3 minutes.

Add rice to the pan, and cook, stirring often, for 2 minutes.

Add cumin, black pepper, olives, salsa, chicken bouillon, and water.

Stir to combine and bring to a boil. Once boiling, cover, reduce heat to low, and cook for 20 minutes.

Remove cover and fluff with fork before serving.
