Seeded Nut Bread

My inspiration

This bread is so easy. Place all ingredients in your stand mixer. Attach dough hook. Knead for several minutes. Voila!

Dry ingredients
     2 1/2 cups flour
     2 1/2 tsp instant yeast or 1 pack
     2 tbsp sugar
     1 tsp salt
     1/4 tsp baking soda
     2 tbsp minced onion
     1 tsp dill
     1 tbsp caraway seed
     2 tbsp sunflower seeds, I used salted
     1 tbsp chia seeds
     1 tbsp flax seeds
     2 tbsp pecan pieces finely chopped

Wet ingredients
     1 cup small curd cottage cheese
     1/4 cup warm water
     1 tbsp butter, room temp
     1 egg


Place all dry ingredients in the bowl of your stand mixer fitted with the dough hook.

Warm your cottage cheese a bit in the microwave. Add the water and egg. Stir together.

Add your wet ingredients to the dry. Add a dollop of butter. Turn on your mixer and knead so the dough comes together. If it's too dry add a bit of water. Too wet, add a bit of flour. Let dough rise in a warm spot until double. The time will vary depending on the weather.

When the dough has risen shape it into a loaf and put it in your greased loaf pan. My pan is 11" x 4". Let the dough rise in a warm spot until double in size.

About half way through the second rise preheat your oven to 350 degrees. When the dough has risen place it in your preheated oven for approx 30-40 mins.

Remove when loaf is nicely browned and sounds hollow when tapped.

I love this recipe. It's highly adaptable. Leave out the seeds and nuts you don't like and add what you do like. It makes delicious toast in morning. It's a great accompaniment to soups & makes a wonderful sandwich.
