salsa verde [sahl-suh vur-dee; Spanish, Italian sahl-sah ver-de]
1. Mexican Cookery, Latin-American Cookery. a green sauce of tomatillos, chili peppers, cilantro, garlic, and onion.
2. Italian Cookery. a green sauce of olive oil and vinegar or lemon juice, flavored with parsley, capers, anchovies, garlic, and mustard.

Preheat oven to 400
1 lb tomatillos
4 garlic cloves
1 onion peeled and cut in 4 large pieces
1/2 bunch of cilantro
1 Tbsp sugar
salt to taste
1 cup water
Place tomatillos, jalapenos, garlic & onion on baking sheet. Roast in preheated oven for 15 minutes. Turn over and roast for another 15 minutes. Remove from oven and let cool.
Wash your cilantro by soaking it in a large bowl of water.
Once veggies are cool cut the jalapenos and onion into smaller pieces. Now place them all into a food processor. Add salt and sugar. Pulse until well combined.
Now add the cilantro and pulse again to combine. Add 1 cup of water and pulse to combine. Add more salt as needed. Donít be surprised if it takes a lot of salt. I used 3-4 tsp in mine. Add more water if you want a thinner consistency.
Note: for a spicier version add more jalapenos.
