Pesto Pasta with Sun Dried Tomatoes and Asparagus
My inspiration Damn Delicious
This pasta recipe comes together quickly and it's good hot or cold.
8 oz mini farfalle or pasta of choice
1lb asparagus washed and trimmed of woody ends
1 tbsp butter or oil
Salt & Pepper
1/2 cup pesto
1/3 cup sun dried tomatoes in olive oil, chopped
Parmesan cheese to taste
Boil your pasta according to package instructions.
While pasta is cooking trim your asparagus.
Heat a medium saucepan over med heat. Add butter. Add asparagus and season with salt and pepper. Cook until crisp tender. This will take just a few minutes. Stir occasionally. I like mine to sit and get a little char on them. Remove from heat and set aside.
Chop your tomatoes and set aside.
Measure your pesto and set aside.
When pasta is done, drain and add it to a mixing bowl. Throw in 1/2 cup of pesto, tomatoes and asparagus. Mix well. Add salt, pepper and parmesan cheese to taste. I used sea salt, garlic salt & seasoning salt.
It's just that quick. Serve hot or cold.
You could throw in chicken breasts and make it a main dish. I paired mine with chicken parmesan. You can find the recipe here.
Note: if you have leftovers you may need to add additional seasoning the next day. The pasta will absorb the flavors as it sits.
Tip: this is how to store asparagus. Lightly cover with plastic. I've really grown to love asparagus.
