No Bake Cheesecake with Blueberry Sauce

(My inspiration: Thirty Handmade Days)

Crust

     12 whole graham crackers, blended
     1/4 cup sugar
     1/2 cup butter, melted

Filling

     2, 8oz blocks cream cheese, softened
     1 cup powdered sugar
     2 cups heavy whipping cream
     1 tsp vanilla
     1 tsp almond
     dash of salt

Blueberry Sauce

     2 cups fresh or frozen blueberries
     1/2 cup sugar
     1 tbsp butter
     1 tbsp cornstarch
     1/4 cup water
     squeeze of lemon
     dash of salt

Prepare baking pan. I used a 9”x9” square. An 8” would be fine. Square or round, doesn’t matter. Use your favorite! Spray with cooking spray.

For crust, place crackers in blender or food processor. Blend to fine crumbs. Add sugar. Blend again. Add melted butter. Blend again. Press crumbs into the bottom of your pan. Place in freezer to chill while you make your filling.

For the filling place blocks of cheese into mixing bowl. With whisk attachment whip cream cheese until fluffy.

Add powdered sugar and whip until incorporated. Add vanilla and almond and mix.

Add 2 cups heavy whipping cream and whisk. Start on lower speed and gradually increase to high. Whip until thickened.

Remove crust from freezer

and spoon filling on top. Spread evenly over crust. Place into refrigerator for at least 2 hours.

While your cheesecake is chilling, make your sauce. In a medium saucepan add blueberries and cornstarch. Stir to coat blueberries. Add butter, sugar, lemon and water.

Bring to a boil and simmer for 5 minutes. Once thickened, remove from heat and set aside.

When your cheesecake is chilled spread the sauce evenly on top. Another option is to dollop sauce on top of pre cut slices.

Cut cheesecake into desired slices. Plate and serve!
