a Mexican-style dish made with chilies or chili powder, ground or diced beef, chopped onion and pepper, and tomatoes.

Low Carb Meat Lovers Chili

What do you eat on a rainy, chilly day? Chili of course. I'm not a huge fan of chili but I'm a huge fan of this meaty version.

     2lb ground meat, I use beef/pork but use your favorite
     14 oz package Chili Cheese smoked sausage
     3 cloves garlic, minced
     2 celery stalks, diced
     1/2 C onion, diced (I use sweet)
     1 can Fire roasted tomatoes
     1 8oz can tomato sauce
     1/4 C La Costena pickled jalapenos, chopped (you can use any brand but these are my favorite)
     1 Tbsp ground Coriander
     3 Tbsp Chili powder
     1/4 tsp dried Oregano
     1/2 tsp smoked Paprika
     1/2-1 tsp Cayenne Pepper, depending how spicy you like it
     1/2 tsp Cumin
     1 Tbsp Golden Monkfruit sweetener or your favorite kind. Stevia is much sweeter so be careful!

     Shredded cheese
     Sour Cream
     Green onion
     Pickled Jalapeno

     1 12' skillet
     1 10' skillet

Place your pans on the stove top and turn the heat to medium. Add one lb of meat to each pan in a big lump and let it brown. Leaving the meat in a lump will help it brown in the beginning. Once browned on one side, flip it and brown the other side. When both sides are nicely browned you can start to crumble the meat in the pan. Now combine both meats in the larger skillet & continue to cook until done.

In the smaller pan add your chopped celery & onion. Cook over medium heat until soft. Turn the heat down and add your garlic. If your pan is too hot the garlic will burn. Let it cook for a few minutes. Add coriander, chili powder, oregano, cayenne pepper, smoked paprika & cumin. Saute for a few minutes until combined. Add this to your meat and mix to combine.

Next, add your tomato sauce and diced tomatoes to your meat/veggie mixture. Now start to season it. Add your monkfruit. Stir. Add you salt & pepper to taste. Continue seasoning until it suits your taste. I like a lot of flavor!

Cut your sausages into bite sized pieces. Saute them over medium heat just until a little browned. Add them to your chili and stir to combine.

Serve it up in your favorite bowl and top with cheese, sour cream, green onion & jalapenos. I also like to add chopped raw onions. It would be great served with low carb cornbread or biscuits. save time you could brown your ground meat and throw all of the ingredients except the sausage in a crock pot. Brown and add the sausages right before serving.
