Hot & Sour Soup

Hot & Sour Soup

My inspiration Feed Me Pheobe. This is hands down one of my favorite soups.

Ingredients
     1 Tbsp vegetable oil
     1 small onion, I use sweet onion
     1 bunch green onions white and green parts separated & chopped 1 lb mushrooms
     1 tsp white pepper, this adds a lot of flavor
     2 tsp chicken bouillon powder
     2 tsp ground ginger
     2 garlic cloves, minced
     4 heaping tsp Sambal Olek
     1/4 cup rice vinegar, white vinegar will work
     1/4 cup soy sauce
     6 cup water
     4 Tbsp cornstarch mixed with 1/3 cup water
     2 eggs, beaten
     salt to taste

NOTE: If you like the flavor of sesame, add 1 tsp of sesame oil along with the olive oil.

Directions

Hot & Sour Soup

Heat a stockpot over med heat. Add your olive oil & then your chopped onion. Add the white parts of the green onion. Cook for about 5 minutes stirring occasionally.

Add your mushrooms & continue cooking.

Add your garlic, white pepper, bouillon powder, ginger, & Sambel Olek. Cook for 2 minutes. Stir. Add your vinegar & soy sauce. Stir.

Add your water. Stir.

Add your cornstarch water mixture & stir. Salt to taste. Turn up the heat and bring to boil. Turn the heat down and let the soup simmer for 10 minutes.

Remove from heat and add your beaten egg while stirring. Stir in green onions. I added an extra splash of vinegar for more tang!

So simple. So delicious. Tangy and spicy! For a heartier helping add some crunched up Ramen noodles. Delish!
