(My inspiration: Homemade Food Junkie)
1lb ground pork
2 cups Panko bread crumbs
3/4 cup parmesan cheese
1 onion, finely chopped
1 tsp salt
1 tsp pepper
1 tsp seasoning salt
Oil, butter or other fat for frying
2 tbsp cornstarch
2 cups pineapple juice
6 tbsp apple cider vinegar
2 tbsp soy sauce
6 tbsp Hoisin sauce
1/2 tsp ginger
1/2 tsp garlic salt
1-2 tsp crushed red pepper (optional)
1 can pineapple tidbits, drained
1 red pepper
1 green pepper
White rice for serving. Recipe here.
Lightly grease your crock pot.
In a large bowl combine all meatball ingredients.
Shape into small balls approx 2Ē in diameter. They donít have to be perfect!
Heat a large skillet w/ fat. Enough to cover the bottom of the pan.
Brown your meatballs.
Once browned add them to your crock. Cook on low for 4 hours or until done. The last hour of cooking you will add your sauce.
While your meatballs are cooking prepare your sauce. In a medium saucepan add your sauce ingredients except the pineapple, red pepper & green pepper. Bring to a boil and let simmer for 5 minutes.
Remove from heat and stir in peppers & pineapple.
Add your sauce to the crockpot for the last hour.
When heated through, serve with white rice. A quick easy dinner that wonít heat up your house in the summer! I love that! Itís a sweet, tangy treat! A burst of flavors!
NoteÖ.As youíre cooking, taste your food. Once the meatballs are mixed put a little chunk in the microwave for 20 seconds and taste it. Make sure it is well flavored. The same rule applies to the sauce. Add your ingredients and then taste it. Adjust it to your taste.
