Gluten Free Gingerbread Pancakes

Serves 2-3


     3/4 cup all purpose gluten free flour (I use Bob Mills)
     1/8 cup of sugar or brown sugar, your choice
     3/4 Tbsp gluten free baking powder
     3/4 tsp cinnamon
     1/4 tsp ginger
     1/4 tsp salt
     pinch of cloves
     pinch of nutmeg
     1/2 tsp vanilla
     1/8 cup molasses
     1/2 cup milk of choice
     1/3 cup oil, mild like sunflower seed or canola
     1 egg
     butter for frying


There are no step by step instructions for this recipe.

Put all of the ingredients in a bowl and whisk.

If the batter is too thick add some milk. If it's too thin add some flour.

Taste it and adjust to your taste. You might like more sugar or a little more salt. Perhaps you want to amp up the spices!

Preheat nonstick skillet over med to med-low heat. Every stovetop is different so you will need to adjust the temp as needed.

Add a pat of butter to the skillet. Once butter is melted add your pancake batter. I used 1/2 cup measuring cup.

Flip pancake when it starts to bubble on the top around the edges.

Gluten Free Gingerbread Pancakes

Serve w/ whipped cream and your favorite syrup.

These are so yummy. They get a little crisp on the edges and they are so soft on the inside. I like them plain with no syrup at all!
