6 large eggs
Salt & pepper
1/4 cup grated Parmesan or Romano Cheese
1/2 cup Three cheese blend
1 tbsp butter
1/2 medium onion, chopped
1 small baked potato, cooled and diced
4 asparagus spears
1 c loose spinach
1/3 c roasted red pepper, chopped
1/4 cup green olives, chopped
grated parmesan cheese
In advance you will need to bake and cool your potato.
Preheat oven to 375
Prepare your garnish.
Finely chop your desired amount of tomatoes.
Drizzle with a bit of olive oil. Sprinkle with garlic salt, pepper & parmesan cheese. Set aside.
For the frittata. In a bowl, beat your eggs and season with salt and pepper. Add the cheeses and set aside.
Chop your asparagus.
Dice your potato
Heat your butter in a 10Ē non stick skillet on med high. Add your onion & let brown for a few minutes. Now add your potato. Season with salt and pepper. Let cook for a few minutes until browned. Add your asparagus and allow to cook for a few more minutes. Not too long, we donít want mushy asparagus.
Add the spinach and let wilt for a few minutes.
Now stir in your red pepper and green olives. Let warm slightly. Make sure your ingredients are evenly distributed in the pan.
Turn the heat down to low and add your egg mixture starting with the edges and finishing in the middle.
Let the eggs cook on the stovetop until edges are well set. About 5 minutes.
Transfer to preheated oven and cook for approx 10 minutes or until eggs are cooked through and center is set.
Remove from oven and let sit for a couple of minutes.
Now slide the frittata onto a chopping board. You can use a spatula to make sure the edges arenít stuck but it should just slide right out.
Cut into desired wedges.
Place on plate and garnish with tomato garnish & a sprinkle of pepper.
So easy & pretty. The potatoes really make this a hearty dish. Have fun with it and use your favorite veggies, cheese and other ingredients you have.
