French dip [ french dip ]
a hot sandwich of roast beef, pork, or lamb, served on a crusty roll over which seasoned pan juices are poured.

Slow Cooker French Dip Sandwiches-low carb
Fix it and forget it! Make ahead and serve the next day!
3.5-4lbs chuck roast
1.5 C water
1-2 tsp beef base
1 Tbsp Worcestershire Sauce
Montreal Steak Seasoning or seasonings of your choice
Fresh ground black pepper or pepper of choice
1 Sweet Onion, sliced (add more if you love onion)
Oil for frying
Provolone cheese, sliced

Don't make your buns too big they are very filling! A little goes a long way.
Prepare your slow cooker. Spray with non-stick spray spray and turn on low.
Slice your onions & add half of them to the slow cooker. Set the other half aside.
Heat a large skillet and add some oil for frying. I use Avocado oil. Once the pan is hot add your roast. Sprinkle generously with Montreal Steak seasoning & fresh ground pepper, and repeat on the other side. Let the meat sit & get a nice sear on it. Flip the meat again and sear the other side. You can repeat this process if needed. Once seared add your meat to the slow cooker. Now add the other half of your onion on top of your meat. Pour the water mixture into your hot pan to deglaze it and capture all those yummy flavors. Pour your water mixture into the slow cooker.
Cook on low until tender. Approx 8 hours. You can also cook it overnight.
When the meat is tender, heat a frying pan on the stove. Shred your desired amount of beed and add it to the pan. Spoon some of those yummy juices over the shredded beef. Let it simmer for a few minutes. Taste it now to see if you need to add more seasoning. Add seasoning as desired.
Turn your broiler on to low. Prepare a baking sheet with parchment paper. Slice your buns and lay them open on the baking sheet. Using tongs, add beef to the top of each bun. Leave the sauce in the pan. Top your beef with 2 slices of provolone cheese. Place the baking sheet in the oven and broil for 5-8 minutes or until the cheese is bubbly and browned. Remove the sandwiches from the oven and plate them. Now spoon the reserved juices right over the top of the sandwiches & serve!
