a thin, flat cake of batter fried on both sides on a griddle or in a frying pan; griddlecake or flapjack.

1 cup flour
1 tbsp sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/2 cup orange juice
In a bowl mix dry ingredients together.
In another bowl beat wet ingredients, add to dry ingredients and whisk until smooth.
Preheat your pan for a few minutes on med heat. Add some butter to pan and two scoops of batter with a large spoon.
My pan is 10.25Ē and my pancake fills most of the bottom.
When the top of the pancake has bubbles all over itís ready to flip.
Flip pancake and wait for the other side to cook. If it gets too dark then turn the heat down a bit. My first pancake is usually overdone. Repeat steps until your batter is gone.
This makes 4 good sized, soft and fluffy pancakes.
