My inspiration In Katrina's Kitchen
My real inspiration is my sister. She's diabetic and loves sugar cookies. Kind of an oxy moron! This recipe is tasty and no chilling required! Who can't use a time saver?
I get my Xylitol on Amazon. I can't find it at the market. It's pricey but worth it to produce good quality sugar free goodies without the aftertaste.
1 cup butter, softened, I always use salted
1 cup Xylitol put through blender (Xylitol is toxic to dogs so be extremely careful if you have pets)
1 tsp vanilla
1/2 tsp almond, optional
1/2 tsp salt
2 tsp baking powder
3 cups flour
2-3 tsp heavy cream
Preheat oven to 350.
Put your Xylitol in a blender. Blend until fine.
Add your Xylitol & butter to the bowl of your mixer. Stir until well combined.
Add egg, vanilla & almond. Stir until combined. Add your baking powder & salt, stir to combine.
Begin adding your flour 1 cup at a time. After you add your second cup of flour add a couple of tsp of heavy cream. Now add your 3rd cup of flour.
The dough will be very stiff and crumbly.
Turn dough onto a lightly floured work surface. Wet your hands & begin to knead the dough until it comes together.
Cut a piece of dough off
and roll it out. Add flour as needed to prevent sticking.
Using your cookie cutters, cut your desired cookies.
Place onto a greased cookie sheet.
You can use a thin spatula for this but the dough is really easy to work with so you can probably just use your hands.
Repeat this process until the dough is gone.
I used 3 jelly roll pans.
Place in preheated oven for 6-8 minutes or until you achieve your desired doneness.
You can get sugar free Pillsbury frosting at the market.
I did figure out how to make sugar free icing that dries stiff but I was playing around and not writing things down so I don't have a recipe at this time. You will see what it looks like in some of the photos above.
These are really yummy! I had one for lunch today! They are sure to make anyone who is sugar intolerant feel loved!
