It's almost summer and salad season is here! I find the longer daylight hours refreshing and inspiring. Here's a delightful recipe with fresh, vibrant ingredients that are sure to please your palate.

Low Carb Chicken Avocado Salad w/ Strawberries & Orange Poppyseed Dressing

Salad- 2 entree salads

     2 Chicken breasts, pan fried, baked, grilled or rotisserie
     Fresh greens of your choice
     2 avocados, diced
     Crumbled Feta to taste
     Sliced almonds
     SF dried cranberries, optional
     Green onions
     Fresh Strawberries, diced

Dressing -makes enough for 4 salads

     1/4 Cup Avocado oil or oil of choice
     Zest of 1 orange
     1 Tbsp Skinny Syrup of choice or other sweetener of choice (I used glazed donut flavor)
     2 Tbsp SF Maple syrup, optional
     2 Tbsp Whole grain mustard or mustard of choice
     2 tsp poppy seeds
     Garlic powder to taste
     Onion powder to taste
     Salt & pepper to taste, I use a variety of salts when I cook

Prepare your chicken. If itÕs a thick breast IÕll butterfly it so it cooks faster and wonÕt get too dry. Season with seasoning salt, pepper, garlic powder and onion powder. Heat your pan over med/low to medium heat. Add a bit of oil. I used peanut oil. To save time a rotisserie chicken from your local market.

Prepare your dressing. Mix all ingredients in a bowl and season to taste. You will want it well seasoned so it will still be tasty in the salad. If you are using a granulated sweetener you will probably want to warm the oil in the microwave a bit and whisk in the sweetener until it dissolves. You may need to add a bit of water.

Add your greens to a plate. Layer with the rest of the salad ingredients. Top with dressing and serve.

Change it up to suit your taste. You could add pecans, onion, tomato, raspberries, blueberries, fresh pepper or cucumbers. Use up those fresh garden veggies! You can use any cheese you fancy!
