My sister is diabetic so I started experimenting with sugar free recipes. This one's a keeper! I like Xylitol as it doesn't have an aftertaste and you use it cup for cup just like sugar. It's pricey but in my opinion totally worth it. I get it on Amazon.
3 cups salted nuts, your choice. I used Planters Deluxe Mix, Lightly salted. It was 15 oz and some change and that was the perfect amount.
1 1/4 tsp salt
1 1/4 tbsp cinnamon
1/4 tsp nutmeg
1 tsp vanilla
1 cup Xylitol - Xylitol is toxic to dogs so be very careful if you have pets.
1/4 cup water
Heat a large frying pan on medium heat. Once the pan is hot, add your water, Xylitol, salt & cinnamon.
When the sweetener has completely melted, add the nuts and mix well.
Continue stirring to coat nuts and allow the sweetener to cook and thicken. I cooked mine for approx 4-5 minutes.
Once it thickens, remove from heat, stir in vanilla. Let cool for a few minutes. Stir.
I moved mine to a parchment lined pan to finish cooling. If you are using a non stick pan you can skip this step.
Allow to cool and stir to break apart. Store in an airtight container.
Oh my YUM! These are so good! They will be gone in a minute! They have a buttery flavor/texture without the butter.
Note...you can make these with regular sugar too. They are so good. Next time I am adding some cayenne pepper for a kick!
