     3 Tbsp butter cut into 6 pieces
     1 Cup milk
     3 eggs
     1/4 Cup white sugar
     1 tsp Vanilla
     1/2 tsp salt
     1 Cup all purpose flour
     1/2 Cup blueberries, fresh or frozen


     2 Tbsp white sugar
     2 tsp cinnamon

For serving:

     Confectioners sugar
     fresh lemon

Preaheat oven to 375

Spray popover pan with non stick spray. Add the butter to each cup. Place in oven for a few minutes. Just long enough to melt butter. Remove & set aside.

In a mixing bowl combine milk, eggs, vanilla, salt & white sugar. Whisk together.

Now sprinkle in flour, whisking while adding.

Once combined add the blueberries and carefully stir with spoon.

Add batter to prepared pan dividing evenly between cups.

Now sprinkle with cinnamon and sugar mixture. I used approx 1 heaping teaspoon per cup.

Make sure you put the popover pan on a baking sheet before you put them in the oven. They will live up to their name as they bake.
Place in preheated oven for 5 minutes.
Now turn the oven down to 350 and bake for 25 more minutes.

Remove from oven and let cool.
Carefully remove from pan.

Place on desired plate, sprinkle with powdered sugar and then give it a squeeze of lemon. The lemon really adds a lot to this dish so donít skip it! They are best served warm but I am not mad at them when I reheat them the next day!

Note: You can use a regular cupcake pan also. I think I prefer a cupcake pan.
