Makes 7 large waffles

(originally from Baked by Rachel)

Dry ingredients:
     1 1/2 Cups Flour
     1/2 tsp salt
     2 tsp baking powder
     1 tsp cinnamon
     2 Tbsp Sugar

Wet ingredients:

     1 1/2 cups milk
     2/3 cup vegetable oil
     2 eggs, divided
     2 mashed bananas
     1/2 tsp vanilla

Preheat your waffle iron.

Mix all dry ingredients together in a bowl.

In another bowl mix wet ingredients minus the egg whites.

Put egg whites in mixing bowl and whip until stiff peaks form.
Add wet ingredients to dry ingredients & mix.

Add egg whites and slowly fold into batter w/ spatula or wooden spoon.
Place batter in preheated waffle iron.

When ready remove from iron, plate, top with bananas and syrup!
I think they would be great with walnuts too!
This is a good way to use up those old bananas you have!
I think next time Iíll try them with brown sugar!

note: When I reheated the leftovers the next day, I buttered them and crisped them in a frying pan.
