2.5 cups flour
1/4 cup sugar
2 1/4 tsp instant yeast
1 tsp cardamom
1 tsp salt
1/2 cup milk
6 tbsp butter, melted
2 large eggs, room temp
3 tbsp sugar
Zest of 1 orange
2 tbsp butter, soft
1 cup powdered sugar, sifted
1 tbsp Orange Juice, more for thinning as needed

cream or egg for brushing tops
Start by adding 2 cups of flour and the other dry ingredients to the mixing bowl of your mixer. In another bowl stir together milk & butter. Heat in microwave until just warm. Beat in the two eggs. Pour the wet ingredients into the dry and beat on lowest speed until combined.
Switch to your dough hook and add another 1/2 cup of flour. Dough should be slightly sticky. Add more flour if needed. Knead for 5 minutes.
Transfer dough to a greased bowl.
Cover and let rise in a warm place until doubled. This can take 1-2 hours.
While dough is rising make your orange sugar. Combine the sugar and orange zest. Set aside.
Spray your baking pan with cooking spray.
Once the dough has risen, punch it down and let it rest for 5 minutes.
On a floured surface roll the dough out into a large rectangle. Approx 18” x 12”.
Spread 2 tbsp of butter on the bottom 2/3 of the dough. Use more butter if needed. Now sprinkle the orange sugar on top.
Fold the dough like a letter. Bottom third up, top third down.
Cup your dough into 12 strips. Use a pizza cutter, dough scraper or sharp knife. Whatever works for you.
Cut each of the strips 3/4 of the way up.
Once you have cut all of your strips you can begin to twist them. Twist each strand.
Once they are twisted take the strands and create a knot with your dough. Twisting and tucking to make a knot. They don’t have to be perfect or the same.
Place buns on you baking sheet. Cover with plastic wrap and let rise for 30 minutes to an hour.
Preheat oven to 350.
When the buns have risen again brush with cream or egg wash and place them in a preheated oven and bake for 20-30 minutes or until nicely browned.
While your buns are baking make your glaze. Mix all ingredients together adding add’tl orange juice as needed for the right thickness.
Remove your buns from the oven and let cool a bit.
Spread glaze over the top.
They are really pretty if you sprinkle some add’tl orange zest on the top but that is optional.
Plate them and serve them warm! So delicious and so pretty! They make a lovely presentation!
