We were honored to participate in the 2015 Kinship Soup/Chili cook off. To our great surprise and delight, we took home first place for our Thai Coconut Curry Soup. The Morrison County Record article is here.
I have tried to recreate the recipe in a smaller batch so everyone can enjoy making it at home.


     1 tbsp oil
     1/2 green pepper, roughly chopped
     1/2 red pepper, roughly chopped
     1/2 onion, roughly chopped
     2/3 cup shredded carrots
     3 clove garlic, minced
     2 cans coconut milk
     3 cups water
     1 tbsp fish sauce
     1 tbsp sambal oelek (asian chili sauce)
     1 1/2 tbsp curry powder
     juice of 1-2 limes
     2 tsp salt
     1/2 tbsp ground ginger
     4 tbsp brown sugar
     1 can bamboo shoots
     16 oz mushrooms
     12 oz raw shrimp, peeled
     2 cup cooked shredded chicken
     chopped cilantro and green onion for garnish
     Brown rice cooked per package instructions


Chop vegetables.

Heat a large stock pot over med high heat.. Add a tbsp of oil. Add green pepper, red pepper, carrot & garlic. Saute for a couple of minutes.

Add coconut milk & water. Continue heating soup.

Add seasonings. Now taste and add more seasonings to taste.

Once the soup is nice and hot you can add the chicken,

shrimp and mushrooms & bamboo shoots.

It will only take about 3 minutes for the shrimp to cook.

Spoon brown rice into your favorite bowl, spoon soup on top

and garnish with chopped cilantro and green onion.

Itís as easy as that! So yummy!
